The “supa de scigulinn” (onion soup). Making this soup is really easy and the final result is beyond expectations. Here is the recipe:

1.5 kg onions, 100 grams butter, 2 liters beef broth, 2 liters water, salt, pepper, toasted croutons or even better half a round loaf of bread, crust only (center removed).

Brown the butter in a crock pot, add the onions and let them sauté then add broth or water. Season to taste with salt and pepper and simmer for about an hour. Some sage leaves, added halfway through cooking, gives the soup a particular flavour. Stir regularly adding broth or water if it reduces too much. When the cooking is over pour the soup in the half bread loaves. The recipe will be perfect if you use onions from Brunate as they are known for their delicate taste and their property not to break up during cooking.
